The subtle garlic flavor of Garlic Chives is perfect for use in uncooked dishes where raw regular garlic might be overwhelming or too spicy. Garlic Chive flowers, which are also edible, bloom in the warmth of summer, which is in contrast to the early spring flowers of regular Chives. Let a few flower heads go to seed and ripen. The shiny black seeds are a peppery delicacy when sprouted: the perfect winter treat.

Stevia is a great culinary herb and its leaves can be used to sweeten teas and drinks, custards, desserts and more. It is not recommended as a replacement for processed sugar when baking, as Stevia doesn't caramelize or crystallize like sugar does and this difference in chemical reactions when heated may not produce a flavorful or expected outcome. The leaves themselves have a faintly licorice like taste when used fresh and the plant is easy to grow if kept warm. It will continuously flower and will do best in doors in a pot or container if grown in a zone where the weather gets cold and rainy.

Shear back to the ground in late winter or early spring. Divide plants by digging the clumps every two to three years. This plant self-seeds freely but is controllable.

Enjoy oregano aroma and flavor on pizza, in egg dishes, and in tomato sauces. Thought to have a cleaner and sharper taste than true oregano. An essential garden herb with a pungent flavor, this perennial bears light green, pointed, oval leaves that are slightly wavy at the edges. Native to the Mediterranean region, this plant prefers climates with lower humidity, so keep the foliage and roots away from too much moisture. Give it good air circulation. For that reason, it is perfectly suited for a container. In the ground it makes a ground-cover-like mat. Harvest anytime, but especially as the stems begin to get tall and are getting ready to flower — that is when the leaves are the most flavorful.

Tuscan Blue Rosemary is a multipurpose plant. Tiny blue blooms grow along the tall stems from May through midsummer, making this beauty a lovely addition to a bed or mass planting. This plant is also right at home in an herb garden. Pick the fragrant leaves for use in savory recipes. The needle-like foliage can be used fresh or dried. Bright blue flowers line the tall stems spring through middsummer. Harvest the needle-like leaves at any time during the growing season. Space the low maintenance plants at least 2 to 3 feet apart. The upright growth habit allows you to plant closer together than other rosemary plants.

'Arp' Rosemary has an erect habit with gray-green, needle-like leaves. As this culinary herb matures, the stems develop into woody limbs, which are often used to skewer meats and vegetables to infuse the foods with flavor. Perhaps the hardiest of all varieties, it will reach 36" to 48" and widths of 18" to 24". 'Arp' makes a terrific informal hedge and will release its lemony pine-like scent when you brush past it. This tough variety of Rosemary has been known to withstand temperatures as low as in the teens.

Lemon Grass (Cymbopogon citratu?) has become a favorite of American gardeners, although it is best known for providing lemon flavoring to Asian cuisine. A versatile herb, slices of fresh stalks are added to salads, soups, stews, stir fries, and seafood dishes (remove the leaves just before serving). Leaves can also be dried to make teas. Lemon Grass is easy to grow and is especially nice to plant along paths and walkways where the leaves release their fragrance when brushed by people walking by. Out in the garden, it forms a loose, vase-shaped clump to 6? across in its first year.

The gently pungent flavor of Italian Oregano (Origanum x majoricum) makes a delicious contribution to savory meats and vegetables, gives a pleasant accent to cheese spreads, and is often the key to a good pizza sauce. A cross between Sweet Marjoram and the more piquant Wild Marjoram, Italian Oregano tastes like a blend of its parents. The milder flavor makes it more versatile than Greek Oregano—it's not likely to overpower a recipe if you add a pinch more than intended. In short, it's probably the most popular culinary Oregano and we think it belongs in every cook's garden. Use the leaves fresh or dry.
