It is very productive, tolerates a wide range of conditions including cold and heat, and is resistant to bolting. The leaves and stems are nutritious, fiber-rich, and have a mild, spinach-like flavor, making them suitable for fresh eating, steaming, sautéing, and braising. Leaves have a pleasant, mild, spinach-like flavor, while the white stems are juicy and can be cooked similarly to asparagus. Young leaves are good in salads. Steam, stir-fry, or braise the larger leaves and chopped stems.
